Is it possible to hide the quotes of a string?

Yes and nope.
If you need a string as variable, you need to use quotes, and you can't hide them.
If you don't need a string you can use an unknown, using as space separator an unicode character like the 'FIGURE SPACE' (U+2007)
Be careful because this trick could break the worksheet readability (so even could make harder to debug/understand the worksheet).
