How does one add a new line in case functions or the systems of variables function? For my life of me I can't find it anywhere and it's driving me mad.

Use the arguments separator. Seeing you are in the U.S. that would likely be the comma. For cases you'll need 2 commas for each new line.

Edit: As a side note, it helps to think of these as functions... sys(...) and cases(...). The reason the argument separator (comma in this case) is the hotkey is that you're adding arguments to the input of the function. SMath just changes the visualization, but they are still just functions under the hood.
